While I was making applesauce today, I decided to make something different for dinner. Here is what I made tonight
Roasted red potatoes w/ vegetables and fresh spices.
Ingredients:
Red Potatoes ( local )
Turnip
Brussels Sprouts ( from my mother in laws garden)
Carrots
Fresh Thyme
Fresh Rosemary
Fresh Oregano
Olive Oil
Salt
Ground Pepper
Roasted for one hour on 400 degrees farenheit
It was very good! I had it with margarine and my home made applesauce!

I make something similar…..I use red skinned quartered potatoes, carrots, thick sliced onions, Olivio butter spread (this butter spread has lots of omegas in it and made with olive oil and gives veggies an awesome taste perfect for roasting veggies), I use a tad of season salt (I get the brand at save a lot stores has awesome garlic, onion, ect flavoring and is orange in color giving veggies added color), & I use either parsley or cilantro…..it’s yummy and my kids and hubby love it
