I have created my first board on pintrest of photos of the low protein foods I make. Either my low protein baking from various recipe sources such as cambrooke, Virginia Schuett, and other recipe boards. Meal Ideas and low protein cooking.  Fruits , veggies , lower PHE products found in grocery stores and  a collection of my own creations that I had modified to fit my tolerance.

I created this board to give others ideas or show them what can be down with PKU foods . Or sometimes just to see what a recipe looks like when made. My goal is to start tying one new recipe a week and post the photos. To help with variety.

Today is my full day off. The weather was not to great but when it did finally clear up I got outside and planted my veggie garden. Also potted my artichokes, tomatoes, and peppers. I also used my last planter for the radishes. Since I ran out of room in my vegtable garden. I was not able to to get my brussle sprouts , cauliflower or second brocoli planted. Or my cantalope.  I did get onions, beans, cucumber, carrots, lettuce, kholoabi and pumpkins planted from seed in the garden.  I will need to buy a few extra planters so i can re pot the lemon and lime trees we bought from Art Knapps yesterday.  I am so excited and looking forward to benift from growing my own natural and oragnic food! what can be more rewarding from all my hard work! and coles hard work. I am going to start pruning the fruit trees tomorrow and weeding the herb garden! well atleast as long as the weather holds otherwise it will have to wait till my next set of days off.

So heres to nice weather for the remaining of these days off :)

Preparing for our Vegetable Garden

Today I finally buckled down and begun preparing our vegtable garden for planting. The first photo is a photo from 2 weeks ago . I forgot to take one today since my phone was charging inside. The weeds where taking over and up to my knees!

It took me 2 hours to weed it all and rake out the debrie and prepare the soil. We are now ready to plant. well after cole shovels up my piles first lol.

the onions and rubarb  are really coming along already . Also at the far side of the garden we have a lovely herb garden growing and it has done so well over the winter . many of the spices have come back strong and growing very tall. so far we have basil, winter and summer sage, oregano and rosemary, however the rosemary did not recover over the winter.  I have just planted more basil, mint and parsley.

For the vegetable garden we are planting:

bell peppers
banana peppers
lettuce
carrots
celery
onions
cabbage
tomatoes
onions
cucumber
pumpkins 
and maybe corn or squash!

Its going to be a great season and I am looking forward to making my own salads and vegtables from my own garden and hard work.

We also have many fruit trees, we have a pear tree, possible apple tree and 2 others we have not identified yet. including grapes. I am excited to see what the other trees  are.  Will be great to have fresh fruit this summer and for canning come winter!

Spaghetti night..

 

So after a full day of being in the sun , I wanted something different to have for dinner.

I decided to make some low protein spaghetti!

I cut up , celery, onions, peppers, carrots, garlic, cherry tomatoes, and lots of mushrooms. Added in some oregano and Ragu , sauteed it and let it simmer while I boiled a large pot of Aproten Spaghetti.  After I combined all the ingridents in my wok and let simmer for 3 minutes, then served with a little salt and pepper!

I really feel like I got a lot accomplished today and am happy to finally sit down and enjoy my dinner!

Light Homestyle bread

From the Apples To Zucchini Recipe book by Virgina Schuett and Dorothy Corry.

 

In Place of 1 cup Wel-Plan I use 1/3 cup cambrooke foods all purpose mix and 2/3 cup wheatstach, then I follow the recipe as directed.

 

1 3/4 cup wheatstarch

3 1/2 tablespoons metamucil

2 teaspoons active dry yeast for bread machines

1 tablespoon sugar

3/4 teaspoon salt

3 table spoons applesauce ( I actually use 1 snack pack applesauce by Motts or Western family. I use the hole thing and put in the liquid measuring cup with the water )

1 1/4 cup water.

 

1: add dry ingridents to a 1 1/2 pound capacity bread machine in order listed. Mix Well.

2: mix together water and applesauce in a liquid measuring cup.

3: start the bread machine. I use the black and decker all purpose. I set it for light crust, regular loaf, 2 lbs. Immediately add the liquid ingridents to bread pan all at once using rubber scraper to push ingridents into center. Close bread machine and bake for 4 hours.

 

let stand for an hour to cool and harden before serving. Otherwise the bread will just tear if you try to cut it.

 

This bread is delicious!!!! Id eat it every morning If I could. Its by far my most favorite low protein bread and with a little miracle whip and dayia cheese it makes the perfect grilled cheese!

This year I am focusing on growing and eating raw and oragnic. Growing my own vegtables, fruit and learning to can and preserve. These are from photos of my first day outside working. Today I planted alll our flower beds and begun pruning the fruit trees. Next week I begin weeding and rotertillering the veggie garden! The rubarb is doing lovely , my herbs have grown back in and all my tulips are blooming!

April 25th 2013

Well Today I finally had an eventful day! I got out in the garden and planted all my flowers, did some yard work, through a loaf of bread in my bread machine and then when I came inside all covered in dirt I decided I had a craving for pizza. I have not made a low protein pizza in ages! So I jumped in my car and went and got some groceries and bought a pizza for cole too!

I came home and baked a wheatstarch pizza from scratch and topped it with onions, garlic, tomatoes, red peppers, mushrooms and Dayia Peppper jack Cheese! IT was so delcious! 

So now cole and I are sitting here eating pizza together and watching the evening news.  I feel so much better than I did this morning and happy to have some low pro baking done. I am looking forward to taking pizza to work tomorrow. Its one of my favorite foods. I got so worried about weight loss and calories though that I didnt want to eat that much low pro food and I havent had time for baking. 

It was a beautiful day , high of 25 so the sun and the heat inspired me. So did my work on the garden. I planted all my flowers , and sun flowers , cherry tomatoes and onions. My tulips are blooming and I had a small bust of energy. 

I will be tackling my vegtable garden on my next days off. I am excited to be growing my own food this summer. I am focusing on being more green and organic. I look forward to this summer being able to eat my own foods from my garden.

Because Cole’s mom grows such a big garden every year we eat all organic all summer long and she loads us up when we go over ,  we are focusing on growing what we use on a daily basis. Lettuce, and vegtables for salad.  Our herbs are already coming up and the Rubarb is taking over the back of the garden. Looks like the grapes and raspberries and strawberries are coming in to! 

Our Pear tree is blossoming to!I cant wait to have fresh pears and do some canning.  We may have a peach tree growing, and we are going to buy a lemon, lime and apple. 

I want to start making my own applesauce and apple butter! 

So many plans and getting so excited with the weather changing.  I find it so much easier to stay on track when I can grow and eat organic and in the summer , with more variety of fruits and vegetables.  eating fresh and raw. I also look forward to growing my own green smoothie ingredients! 

 

oh and because its so hot here , we can grow pineapples too! 

Its going to be an awesome summer. My back yard its going to be my paradise. Helps that we have a large inground pool in the back yard too!

Cambrooke Bettermilk and MIO!

I recently switched back to bettermilk. I really love the taste and the creaminess  It did take me a few tries to get use to the new texture. It is so diffrent from any other formula. Its creamy, To me it does not taste chalky and does not have an bad after taste. It is not to thick and blends really well. Its hard to describe all the differances if you have not had it. I hear that is made to be more like real milk, I cannot say because I have never tried real milk. 

I was on bettermilk before but then they made some changes to the formula that I was unable to tolerate well. The taste was to diffrent for me and hard on my stomach. So I went back to phenyl ade essentials since i knew it worked for me. I had herd that cambrooke had changed bettermilk back to the original  but I was skeptical to try it again when phenyl ade was working out for me. So I waited alittle longer and am so glad I did go back! It really does make a diffrenace to my weight loss and to my digestive system. My IBS is way more manageable. 

Previously I had been flavouring my bettermilk with Nestle Strawberry Quick. However that just added extra calories. Since I was trying to loose weight I was looking for alternative ways to flavour it as I do not like it plain and I did not like the flavoured bettermilk. 

Cole suggested MIO. He had been using it in his water since moving to kamloops as he dos not like the taste of the water. I did not like MIO in my water . Cole researched MIO and found that though it is an artificial sweetner it is not made with aspartame  It is flavored with surculose. It has no calories and no PHE or protein. It is secreted from the body in the urine and the body is unable to break it down. 

There are a few diffrent lines of MIO , there is a few in America that are made with Caffine. They are not avalible here yet. So far in Canada we have the MIO Original and MIO sport. The MIO sport does have more salt then the originals.  They taste so great in the bettermilk. 

I have been alternating between 2 different flavors every day! I currently have , Berry Pomogrante, Strawberry, Fruit Punch, and Mango . 

We just got The MIO sport berry blast ( blue) and the purple cant remember what flavor is. 

We also just got 2 new originals in black cherry and lemonade. 

They all taste great! I love them and they are working out so well for me :) 

When I went to BC PKU DAY in February I told the Cambrooke rep what how I was drinking my formula! and told him about all the flavors that I have access to. clinic. Recently my clinic added my idea to the monthly newsletter.   Alot of my PKU friends, family and followers did not know MIO did not have aspertame in it , So i am glad I was able to share this with them! I have already recieved messages and emails from others who have given it a try! 

 

If you try MIO in your formula Id love to hear how you like it! It works well in bettermilk, un- flavored formulas like the new Phenylade and the un- flavored MTE packets!

My Pasta Salad

March 22nd 2013 ( Pasta Salad)

This is one of my favorite meals. Low protein Rigitini Pasta Salad.
its about 175 mg phe and 553.7 calories. Its very delicious and very filling. I have been eating this dish since I was in high school. I go through phases though. I hadn’t eaten it in a very long time cause of the high calories and trying to loose weight , however I have been craving it like crazy! I have had it every night for dinner for a week. or two. its my biggest meal of the day right now , since im working nights i eat very little so the calories are not as bad right now.

The dish is one cup dry Rigatini,
1 cup mushrooms,
1 tbs tomatoes
1 tsp garlic
2 tbsp frozen corn
all cooked together,

then add 1.4 cup light miracle whip,
1 tbsp raw onions
1 tbsp raw green onions
1 tbsp raw green peppers,

salt and pepper to taste.

I modify it sometimes, and dont always use the same ingridents but this is my current version!

Today I started my 30 day Green smoothie Challenge with Young and Raw! I am alittle nervous but excited at the same time. I am actually a very picky eater , I have a sensitive stomach  and I react to so many foods. I am doing this challenge to get more variety as well as for my health. I have been reading so many articles about the benifits and I would really like to be healthier over all.  The challenge is to have one green smoothie a day. Young and Raw sent out a grocery list a few days ago and its most everything i buy when i go grocery shopping anyways. Then every night they send you the recipe for the next morning. Some of them call for nuts , or seeds and some things I cant have but I just omit them.  Todays smoothie was : 

* 1 Rib of Celery
* 1 Pear
* ½ Frozen Banana
* ½ Cup of Cucumber
* 1 Handful of Parsley
* 1 Cup of Water or Coconut Water (ideally raw and unpasteurized!)
Harmless Harvest is one of our favorite raw, unpasteurized, and

most delicious Coconut Water. Tastes like it’s fresh from the
Coconut!

Fun Smoothie Facts:

1. Celery will help to lower blood pressure by helping to relax the blood vessels around the arteries.

2. Pear is high in vitamin C, which is important for your immune system.

3. Bananas can help to soothe an upset digestive tract.

4. Parsley is a blood cleanser, and can help rid the body of stored waste.

5. Coconut water is even more hydrating for your cells than regular water!

I am not to sure what I think of it quiet yet. I am not a big fan of the coconut water, It sort of upset my stomach but it was alot easier to actually get the smoothie down then I thought.  I have never had a smoothie with cucumbers and celery before. I had thought it would be more chunky. I guess I have a really good blender. Honestly it was not very thick at all.  I hope I can actually get through this challenge! WIll be interesting to see what the effects are.. if i loose any weight or feel any different. Its not a fast either.. I can eat whatever I want through the day as long as I have my smoothie with breakfast. 

However when you are eating healthy you want to continue.. specially when you are being active as well. Does not make sense to work so hard then eat unhealthy. So hopefully if anything it will keep me motivated! 

I will be sure to post about my progress! I am sending my smoothie recipes to my dietican to be analysed for the PHE amounts. I will share with anyone who is interested!
